Italian Chicken Pitas

Sun Valley Italian chicken pitas ‘enjoy a little dolce vita`.

Serves 4

Ingredients

4 Sun Valley battered chicken steaks

8 regular sized (6’) pita breads

1 cup of full fat plain yoghurt

1 cup chopped sundried tomato

½ cup of sliced black olives

½ of a regular size cucumber, thinly sliced

1 cup of fresh rocket leaves chopped

½ teaspoon of pepper

1 tablespoon of olive oil or your favourite Italian seasoning

2 teaspoons of fresh squeezed or concentrated lemon juice

1 tablespoon of dried basil

Steps to Prepare

Step 1
Place in a bowl the chopped rocket, chopped tomato, olives and cucumber slices
Step 2
Add the olive oil, lemon juice, pepper and natural yoghurt and stir until well mixed
Step 3
Carefully cut each pita bread open to form a pocket and spoon the salad mix equally into each pita
Step 4
Cook the Sun Valley battered chicken steak according to the on-pack instructions
Step 5
Cut each steak into half, and place each half into each half pita bread
Step 6
Sprinkle each finished pita half with the basil and serve with a fresh green salad
Step 7
Mix it up! Try a few drops of your favourite spicy pepper sauce into the salad mix for an exciting taste experience. Replace the full fat yoghurt: half low fat yoghurt and half mayonnaise for an additional twist. Or use mascarpone for l'autentica esperienza italiana !
